Long-term storage of eggs can negatively affect their structure and properties. Chef and renowned British culinary expert Dean Harper shared secrets on how to keep eggs so that the egg white does not become watery.
According to Dean Harper, the freshness of eggs can be determined by the state of the egg white. If the structure of the product has already changed, it cannot be fixed, but it is quite possible to extend its freshness.
“Debates about how to properly store eggs — in the refrigerator or at room temperature — have been ongoing among experts for many years. It is known that the freshness of the product and the firmness of the egg white are lost more quickly in high temperatures and low humidity. Therefore, I recommend storing eggs in the refrigerator,” explains Dean Harper.
He identifies 4 °C as the optimal temperature for storage. The chef also advises placing eggs deep in the refrigerator, closer to the back wall, where temperature fluctuations from frequent door openings are less noticeable, as reported by The Express.
Dean Harper also recommends keeping eggs in their original packaging from the store.
“Try to store eggs in a cardboard container. It is specially designed to preserve the freshness and flavor of the eggs, and it best maintains their consistency and texture,” emphasizes the chef.
In addition, he shares a useful tip: do not use eggs straight from the refrigerator. It is better to take them out in advance and allow some time for them to warm up to room temperature. Sudden temperature changes can lead to cracks in the shell during boiling and reduce binding properties, which negatively affects baking or minced meat for cutlets.
