Is it worth freezing vegetables for the winter?

Freezing vegetables is an acceptable option, says dietitian Alexey Kabanov. He emphasizes that it is an effective method for long-term storage.

 

According to the specialist, frozen vegetables can be taken out of the freezer at any time and used to prepare favorite dishes: side dishes, soups, or snacks.

“Plant-based food is a key component of a balanced diet. Vegetables contain many vitamins, minerals, and fiber, which is particularly important for the normal functioning of the gastrointestinal tract,” notes the dietitian.

As the nutrition expert claims, it is impossible to completely preserve all the beneficial substances in vegetables even with freezing. On average, about 50 percent of their beneficial properties are retained, but this depends on the density of the vegetables and the duration of their storage.
