This okroshka recipe uses kefir and mineral water, making the dish especially refreshing.
The recipe for okroshka with kefir is not much different from traditional versions made with fish broth, kvass, or sour cream with water. You can use any ingredients you have on hand.
For preparation, you will need:
1 liter of kefir;
1 liter of mineral water;
5 eggs;
3 fresh cucumbers;
500 g of boiled sausage;
1 tsp of mustard;
fresh herbs, salt, and pepper to taste.
Preparation
First, boil the eggs hard and let them cool completely.
Then take a large bowl or pot with a capacity of at least 3 liters, where you will place all the prepared ingredients.
Cut the sausage, eggs, and cucumbers into medium cubes, and finely chop the herbs (such as green onions, dill, parsley, etc.).
Pour a glass of mineral water and dissolve the mustard powder in it. Then add the remaining mineral water to the vegetables and add the mustard to give the okroshka a spicy flavor.
Finally, pour in the kefir and mix thoroughly. Add salt to taste and serve.
