The bright red color of the flesh, purple hues, or yellow fibers may indicate the presence of nitrates in the product.
“Nitrates pose a danger as they can be converted into nitrites, which interfere with hemoglobin's ability to carry oxygen. This negatively affects the functioning of the cardiovascular system and the immune system,” noted the expert.
However, the specialist emphasized that the exact determination of nitrates in watermelon can only be done through laboratory tests.
