• 50 g of Parmesan, cut into large chips or flakes;
• half a bunch of garlic;
• half a bunch of parsley.
Salad Dressing:
• 4 tablespoons of extra virgin olive oil;
• 2 teaspoons of honey;
• 2 teaspoons of lemon juice;
• a few drops of vinegar to taste;
• a pinch of salt and pepper to taste.
Preparation:
1. Start by making the dressing. Place all the ingredients in a bowl and mix until smooth. If the honey has a solid texture, it can be slightly warmed in the microwave or in a water bath to make mixing easier. Set aside for a while.
2. Place the washed and dried arugula in a large bowl.
3. Wash the peaches, cut them in half, remove the pits, and chop into small pieces. Add the peaches to the arugula, then add the Parmesan shavings. Stir in the minced garlic and parsley, drizzle with the dressing, and mix thoroughly. Let it sit for 30 minutes.
The secret to this salad lies in the harmonious combination of sweet and salty flavors. It is important to use very ripe peaches that release some juice, making the dressing richer. Before serving, the salad can be sprinkled with Parmesan or served with garlic croutons.
