What is pudding? Discover fascinating facts about the popular dessert

Pudding has a rich history: its early versions can be found in various cultures, regions, and eras, from Ancient Egypt and China to medieval Europe.

 

Although in the 21st century pudding is most often associated with dessert, there are many variations of it. For example, in the United Kingdom, one can encounter meat pudding. This dish is often linked to festive gatherings and special occasions: in some countries, such as the United Kingdom and the United States, pudding is traditionally served at Christmas. Here’s what else you should know!

What is pudding: American dessert

In the United States, probably the main representative of this dessert, pudding refers to a sweet dish based on milk, with a consistency resembling custard made from eggs or mousse created using cornstarch, gelatin, or similar coagulants.

The modern meaning of the word “pudding” as a dessert arose from its original use to describe savory dishes, especially those prepared using a process similar to sausage making. In this case, meat and other ingredients in a mostly liquid state are placed in a casing and then steamed or boiled to allow the contents to set.

Benefits of pudding

Pudding contains eggs, which are an excellent source of protein and vitamins, as well as honey, known for its antiseptic and antioxidant properties. However, excessive consumption of sugar, characteristic of many types of pudding, can lead to weight gain and health issues.

There are four main types and methods of preparing puddings:

boiled;
baked;
steamed;
chilled in the refrigerator.

In different cultures around the world, there are their own versions of “pudding.” For example, in Italy, it may be tiramisu, in Japan — mochi, in India — kheer, and in France — crème brûlée. Each type of pudding has its unique flavor characteristics and preparation traditions.

Pudding is often mentioned in literature and art as a symbol of abundance, comfort, and traditional family meals. For instance, in Charles Dickens' novel “A Christmas Carol,” the main character, Ebenezer Scrooge, receives an invitation to dinner where pudding is served, symbolizing joy and community.

Types of pudding

Betty and Blancmange

The type “Betty,” which originated in colonial America, is a baked pudding made from layers of sweetened fruits with spices and buttered breadcrumbs. The most popular variant is Apple Brown Betty, made from sliced apples and brown sugar.

“Blancmange” is a simple pudding made from milk, cornstarch, sugar, and vanilla. The hot mixture is poured into a mold, chilled, and served with a sweet sauce or fresh fruits. In the original recipe for blancmange, ground almonds were used instead of cornstarch.

“Bread pudding”

Bread pudding consists of bread, milk (or cream), sugar, eggs, and (sometimes) flavorings. Overall, bread pudding has a rich, silky, and not overly sweet custard, and part of the bread in this dessert should be soaked in the custard. Additionally, “bread pudding” should slightly jiggle like jelly when taken out of the oven, as it needs to “set” a bit more after being removed.

“Diplomat” pudding

This is a cold molded dessert consisting of alternating layers of liqueur-soaked sponge cake, jam, chopped candied fruits, and custard (sometimes combined with whipped cream).
