There are many types of tofu: from soft and classic to firm, with added herbs and spices, as well as smoked. The variety of dishes that can be made from this product is impressive: casseroles, desserts, risottos, omelets, vegetable stews, and stir-fries. Today we offer you three versions of tofu scramble, which will be a great alternative to a traditional omelet for breakfast.
Tofu Omelet with Tomatoes
To prepare the omelet, you will need:
300 g of soft tofu;
2 medium tomatoes;
1 onion;
1 tbsp of olive oil;
a pinch of curry, turmeric, thyme, and pepper;
salt to taste.
Chop the onion finely and sauté it in olive oil for a few minutes. Crumble the tofu and add it along with the spices to the onion. Mix all the ingredients while continuing to cook in the pan. At the end, add the chopped tomatoes, cover with a lid, and reduce the heat to low. In 3 minutes, the omelet will be ready! Serve with fresh herbs.
Tofu Scramble
For the second breakfast option, you will need:
300 g of firm tofu;
1/2 tbsp of olive oil;
a pinch of turmeric and black pepper;
a pinch of dried onion and garlic;
salt to taste.
Mash the tofu with a fork and place it in a heated pan with olive oil. Sauté for a minute, then add the remaining ingredients. Continue to sauté, stirring, for another 5 minutes until the tofu turns golden brown.
Serve with a fresh vegetable salad.
Vegan Tofu Omelet with Potatoes
For this recipe, you will need:
450 g of classic tofu;
1 large potato;
a bunch of green onions;
2 bell peppers;
1 tbsp of olive oil;
2 cloves of garlic;
2 tsp of chili powder;
salt to taste;
4 tortilla wraps;
1/4 cup of grated mozzarella;
8-10 cherry tomatoes;
romaine lettuce.
Cut the potato into small cubes and place it in a deep pan, cover with water, and simmer over low heat for 3-5 minutes. Then drain most of the liquid and add olive oil, finely chopped green onions, and garlic, as well as chili powder. After a couple of minutes, add the chopped bell pepper and salt. Mix and continue to cook, stirring, for another 5-7 minutes. Mash the tofu with a fork and add it to the pan, simmer until cooked, stirring occasionally. Serve with a salad.
