Stewed Meat with Vegetables — A Healthy Cooking Method (RECIPE)

Research conducted by scientists at the University of Illinois shows that stewing is the most beneficial method of cooking meat.

 

When frying meat, glycation products are formed, which can accumulate on the walls of blood vessels, leading to their damage. In contrast, such harmful substances are not formed during stewing. Moreover, a significant amount of beneficial substances is preserved in the stewing process. Let’s use this knowledge and prepare stewed meat with vegetables for lunch.

Ingredients:

beef - 500 g;
zucchini - 300 g;
eggplant - 200 g;
tomato paste - 2 tbsp;
onion - 1 pc;
green onion - 3 pcs;
garlic - 2 cloves;
bell pepper - 1 pc;
vegetable oil - 3 tbsp;
dill - ½ bunch;
salt - to taste.

Cut the beef, eggplant, and zucchini into small pieces, the onion into rings, the carrot into thin half-rings, and the bell pepper into strips.

In a frying pan with vegetable oil, place the pieces of meat and lightly fry. Then add the vegetables and tomato paste. Cover the frying pan with a lid, and after 20 minutes, add the minced garlic, herbs, and salt. Keep on low heat for another 5 minutes until fully cooked.
