Specialists from the Institute of Meat and Dairy Industry of Belarus have developed recipes for natural dry meat mixtures that can serve as raw materials for 3D printing of food products.
The key feature of this development is that the raw materials used are completely natural. It contains no preservatives, colorants, stabilizers, or flavor enhancers, noted Irina Kaltovich, head of the sector for comprehensive research on meat products at the Institute of Meat and Dairy Industry.
“In addition, the created mixtures and emulsions have a balanced amino acid, fatty acid, and mineral composition. There are no analogs of such fillers in global practice,” she added.
According to the expert, the uniqueness of the technology lies in the fact that any dish can be printed on a 3D printer: from familiar cutlets for adults to chops in the shape of cartoon characters for children. It is also possible to create dishes tailored to the individual needs of each person.
The researchers are confident that their innovation will be particularly in demand in the restaurant sector. This will allow restaurateurs to reduce the time needed to prepare complex dishes.
Currently, the scientists continue to work on improving the recipe. In particular, they are developing vegan sausage based on plant raw materials, the research of which is in the final stages. In the future, the introduction of this novelty into industrial production is planned.
