How to Make Beet Syrup?

Beet syrup is an excellent product. It is rich in dry substances and can serve as a substitute for honey. It is used to make preserves, jams, and jellies, as well as to bake gingerbread and cookies.

The process of making it is as follows. Beets are thoroughly washed, peeled, and rinsed with water. Large roots are cut into 2–4 pieces and boiled with a small amount of water, preferably steamed, for 3–5 hours. Then they are chopped with a knife, the juice is squeezed out, and combined with the remaining juice obtained during boiling in a pot. The resulting mixture is filtered through cheesecloth and reduced by boiling, stirring constantly, by 5–6 times.

This syrup, like jam, can be stored at room temperature. If long-term storage of beet juice is planned, citric acid or lemon juice (1 g per 1 l of juice) is added before reducing it. This helps to prevent crystallization and gives the juice a pleasant taste.
