Olivier, “Shuba” and “Mimosa” without Eggs: Lean Versions of Favorite Salads

During the Christmas fast, the consumption of fish is allowed, making it easy to prepare familiar hearty salads like Olivier and herring under a fur coat. However, eggs must be excluded, as they cannot be eaten until the end of the fast. You will also need to purchase or make lean mayonnaise that does not contain eggs. As a substitute for eggs, you can use tofu, nuts, or even corn. The result is very tasty and interesting salads that closely resemble their traditional counterparts.

 

Olivier with Beans

During Lent, a can of beans in its own juice or in tomato sauce becomes an indispensable helper. With it, you can prepare a hearty soup, heat it as a main dish, or add it to Olivier instead of sausage.

Lean Olivier is made without meat and eggs. It can be dressed with lean mayonnaise or whipped vegetable oil with a spoonful of lemon juice — that’s also not bad.

1 can of white canned beans
2 fresh cucumbers
2 small pickled cucumbers
1 small white onion
2 potatoes
2 carrots
several sprigs of dill and parsley
salt and black pepper
lean mayonnaise

Step 1. Boil the potatoes and carrots in their skins until cooked. Peel and dice.

Step 2. Open the can of beans, drain the liquid. Mix the beans with the diced vegetables.

Step 3. Dice the cucumbers, both pickled and fresh, draining any liquid if the vegetables released any. Add to the salad.

Step 4. Chop the onion, you can dress it with a spoonful of lemon juice to soften the taste.

Step 5. Finely chop the herbs.

Step 6. Mix everything, season with salt and pepper, and dress with lean mayonnaise.

Olivier with Mushrooms

1 can of sliced mushrooms
3 potatoes
2 carrots
1 can of green peas
1 red onion
1 tbsp of vegetable oil
salt, pepper, lean mayonnaise
dill and parsley

Step 1. Boil the potatoes and carrots in their skins until cooked.

Step 2. Peel the vegetables and dice.

Step 3. Finely chop the onion and sauté it in vegetable oil.

Step 4. Add the sliced mushrooms, from which the brine has been drained, and sauté lightly. Add everything to the vegetables.

Step 5. Chop the herbs, season with salt and pepper, and add the green peas.

Step 6. Mix everything and dress with mayonnaise.

“Mimosa”

During the Christmas fast, fish is allowed, so preparing “Mimosa” is not difficult. However, eggs must be excluded. If you want to remove the fish as well, you can use seaweed. For dressing, we use lean mayonnaise.

“Mimosa” with Seaweed

3 potatoes
3 small carrots
1 can of corn
2 red apples
1 jar of seaweed
100 g of firm tofu cheese
1 onion
lean mayonnaise
salt

Step 1. Bake the potatoes and carrots in their skins, then cool and peel.

Step 2. Grate the potatoes on a coarse grater and lay them on the bottom of a salad dish.

Step 3. Spread a thin layer of mayonnaise and lightly salt.

Step 4. Drain the oil or brine from the seaweed, you can rinse the seaweed with boiled water and let it drain. Lay it over the potatoes and spread with mayonnaise.

Step 5. Grate the carrots on a coarse grater, lay them on the seaweed, and spread with mayonnaise. Lightly salt.

Step 6. Finely chop the onion.

Step 7. Mix the grated tofu with the onion, lay it over the carrots, and spread with mayonnaise.

Step 8. Lay the corn over the tofu, which can be chopped with a knife or left whole. Spread with mayonnaise.

Step 9. Let the salad soak in mayonnaise in the refrigerator, serve after 2-3 hours.

Herring Under a Fur Coat. Lean Version

In this recipe, you will also need to exclude eggs and replace the usual mayonnaise with lean mayonnaise.

2 lightly salted herrings
2 medium beets
3 carrots
3 potatoes
2 red apples
1 onion
salt
lean mayonnaise

Step 1. Boil the beets in their skins. Separately, boil the potatoes and carrots.

Step 2. Peel the vegetables.

Step 3. Grate the potatoes on a coarse grater and lay them on the bottom of a salad dish. Spread with mayonnaise.

Step 4. Cut the peeled herring into small pieces and lay it over the potatoes.

Step 5. Finely chop the onion, sprinkle it over the herring, and spread with mayonnaise.

Step 6. Spread the grated carrots with mayonnaise.

Step 7. Finely chop the apples and lay them over the carrots.

Step 8. Lay the grated beets on top of the salad and spread with mayonnaise.

Step 9. Place the salad in the refrigerator overnight.

Lean “Caesar”

150 g of white bread
150 g of cherry tomatoes
150 g of firm tofu cheese
200 g of iceberg lettuce
100 g of lean mayonnaise
1 handful of cashew nuts
1-2 cloves of garlic
1 tsp of lemon juice
salt
½ tsp of mustard
a couple of pinches of dried granulated garlic
vegetable oil

Step 1. Cut the bread into small cubes and toast in a pan with added dried garlic and vegetable oil.

Step 2. Cut the cheese into cubes, halve the tomatoes, and tear the lettuce into large pieces.

Step 3. Chop the cashews not too finely and toast them in a dry pan.

Step 4. Mix the mayonnaise, lemon juice, and mustard. Press the garlic cloves and add to the mayonnaise. Let it steep for half an hour.

Step 5. Mix the cheese, croutons, tomatoes, and lettuce. Dress everything with the sauce and sprinkle with nuts. Salt if necessary.
