Nutritionist Reveals How to Make «Antioxidant Pudding» — A Quick and Healthy Breakfast

While most people habitually cook oatmeal or fry eggs, British nutritionist Emily English suggests starting the morning with a dessert.

The publication Get Surrey, citing the doctor's social media, shared a recipe for berry pudding rich in antioxidants and fiber.

According to Emily, the recipe is not only simple but also fully aligns with the principles of balanced nutrition: it combines protein, slow carbohydrates, and healthy fats.

How to Prepare the Dessert for Breakfast

In a small baking dish, mix 400 g of frozen berries (raspberries, blueberries, strawberries, or any others to taste), 2 tsp of honey, and chia seeds.

In a separate bowl, combine 2 egg whites, 1 tbsp of nut butter, 70 g of oatmeal, a little sugar, cinnamon, and a pinch of salt. Spread the mixture over the berries.

Bake the dessert for 30–40 minutes at 180 °C, until the crust turns golden brown. Serve the dish warm with a portion of high-protein yogurt. If you prepare several portions in advance, they can be stored in the refrigerator for up to three days and quickly reheated before breakfast.

Benefits of 'Antioxidant Pudding'

Thanks to the berries, the dish is enriched with antioxidants that protect cells from damage and reduce the risk of chronic diseases. Oatmeal and chia seeds, in turn, ensure a long-lasting feeling of fullness and improve gastrointestinal function.
