Cheese pancakes are traditionally associated with sweet toppings, but there are also savory options that can diversify the usual menu. Cheese pancakes with herbs and cheese have a delicate texture and rich flavor, making them suitable not only for breakfast but also for a light brunch.
Ingredients
For the pancakes:
- cottage cheese — 600 g
- eggs — 2 pcs.
- flour — 3–4 tbsp (depending on the moisture of the cottage cheese)
- hard cheese (mozzarella or parmesan) — 100 g
- dill — 4 sprigs
- parsley — 4 sprigs
- salt — to taste
For serving:
- cream cheese
- red fish
- olives
- herbs
Preparation
Combine the cottage cheese with the eggs and salt, then blend until smooth using a blender. Add flour, starting with three tablespoons, and mix — the mixture should hold its shape well.
Stir in the grated cheese and finely chopped herbs. Form the pancakes with wet hands to prevent the dough from sticking.
Fry over medium heat on both sides until golden brown. If desired, you can use clarified butter for a richer aroma.
Serve hot with cream cheese, red fish, olives, and fresh herbs. This combination makes the dish more expressive and is suitable for both everyday breakfast and serving at the table with guests.
