Ingredients
- buckwheat noodles (soba) — 200 g
- mushrooms (frozen) — 150 g
- carrot — 1 pc.
- onion — 1 pc.
- green onion — 2 stalks
- bell pepper — ½ pc.
- white cabbage — ¼ head
- green beans (frozen) — 150 g
- vegetable oil — 3 tbsp.
- sesame or olive oil — 3 tsp.
- salt — to taste
For the sauce:
- soy sauce — 4 tbsp.
- water — 1 tbsp.
- sugar — 1 tsp.
- rice vinegar — 1 tbsp.
- starch — ½ tsp.
- sweet chili sauce — 3 tsp.
- garlic — 3 cloves
- ginger — 2 tsp.
How to cook
Start with the sauce — it should "steep" a bit to enhance the flavor. Mix the soy sauce with sugar, add water, rice vinegar, chili sauce, and starch. Stir well to avoid lumps. Then add finely chopped garlic and ginger and let the mixture sit for a few minutes.
Now, focus on the vegetables. Chop the cabbage, pepper, onion, and mushrooms, and grate the carrot.
Heat a pan with vegetable oil and start with the onion — sauté it for about a minute. Then add the carrot, and after a minute — the green beans. Let the vegetables simmer a bit, then add the cabbage.
Cook everything over medium heat, stirring occasionally. After a few minutes, add the pepper and mushrooms. First, cook with the lid off, then cover and cook until the vegetables are tender — they should remain slightly crispy, not turn to mush.
Meanwhile, boil the noodles. In boiling salted water, add the soba and cook for about 4 minutes. Then drain in a colander and rinse with cold water to stop the cooking process. Immediately add a bit of sesame or olive oil and mix.
When the vegetables are ready, add the noodles, mix, and pour in the sauce. Cook for another couple of minutes for the sauce to distribute evenly and thicken slightly.
Finally, taste for salt and add if necessary. Remove from heat and sprinkle with chopped green onion.
