Hot garlic soup “Česnečka” is a hallmark of Czech cuisine that helps cope with cold winter days and recover after festive feasts. The aroma of garlic combined with sautéed potatoes in lard, caraway, and marjoram creates a rich flavor and a cozy home atmosphere. Ingredients:
- Potatoes — 4–5 pcs.
- Garlic — 28 cloves
- Onion — 2 pcs.
- Broth (meat or vegetable) — 2 l
- Lard or butter — 40 g
- Ground caraway — 1 tsp.
- Dried marjoram — 1 tsp.
- Bread for croutons — 3 slices
- Salt, pepper, dried herbs — to taste
Preparation:
- Cut the potatoes into cubes and boil in the boiling broth for 7 minutes.
- In a pan, toast the bread until it becomes crispy croutons. In another pan, sauté the finely chopped onion in lard or butter until soft.
- Remove the potatoes with a slotted spoon and add them to the onion, sautéing together for about 5 minutes until lightly golden.
- Add 25 cloves of garlic, sliced thinly, to the boiling broth. Combine the sautéed potatoes with the onion and garlic broth, and cook until the potatoes are completely soft.
- At the end, add crushed marjoram, caraway, salt, and pepper. Grate the remaining 2–3 cloves of garlic directly into the soup for a more intense aroma.
- Serve hot, garnished with croutons and fresh herbs.
