Homemade cottage cheese and apple cookies are a simple and quick way to prepare a tasty treat for breakfast or tea time. The recipe does not require complicated steps or extra ingredients: the baked goods turn out tender with a slight tartness from the apples and a hint of lemon.
Ingredients:
- Egg — 1 pc.
- Salt — 1/4 tsp.
- Sugar — 80 g
- Sour cottage cheese — 250 g
- Oil — 50 ml
- Lemon zest — from 1 pc.
- Lemon juice — from half a lemon
- Apples — 1–2 pcs.
- Flour — 250 g
- Baking powder — 1 tbsp.
Preparation:
- In a bowl, beat the egg with salt and sugar until the crystals dissolve. Add oil and cottage cheese, and mix well. For a uniform consistency, the cottage cheese can be blended.
- Remove the cores from the apples, cut them into small cubes or grate them on a coarse grater, and add to the cottage cheese mixture. Add lemon zest and juice, and gently mix.
- Combine the flour with the baking powder, add to the cottage cheese base, and knead a soft, slightly sticky dough. Form small cookies and place them on a baking sheet lined with parchment paper. Optionally, sprinkle with sugar.
- Bake at 180 °C for about 20 minutes until lightly golden. Let the finished cookies cool slightly before serving.
