Kugel is a traditional Jewish dish, with recipes that originated many centuries ago in Germany. It is a casserole or pie, usually round, made from potatoes, noodles, or vegetables. Even with simple ingredients — potatoes, onions, and eggs — it results in an incredibly delicious casserole with a crispy crust and a tender center.
Ingredients
- Baking potatoes — 1200 g
- Onion — 150 g
- Chicken eggs — 3 pcs.
- Salt — 1 tsp.
- Ground black pepper — ½ tsp.
- Vegetable oil — 6 tbsp.
Preparation
- Grate the potatoes on a coarse grater and the onion on a fine grater. Transfer the vegetables to a colander over a bowl, lightly press with a spoon to drain excess liquid.
- Beat the eggs with salt and pepper until fluffy, add the vegetables and 2 tbsp. of oil, and mix thoroughly.
- Grease a baking dish with 2 tbsp. of oil, transfer the mixture, smooth it out, and drizzle with the remaining oil on top.
- Preheat the oven to 180°C and bake for 50 minutes.
- Serve hot with sour cream, herbs, or fresh vegetables.
