soy sauce 2 tbsp.

Preparation

Thoroughly dry the chicken legs with paper towels. Using a sharp knife, trim the tendons around the upper joint of each leg, then pull the meat down along the bone and form it into a ball.

Place the prepared chicken legs in a large bowl, season with salt and pepper, and add garlic to taste. Drizzle the chicken legs with lemon juice and two tablespoons of olive oil. Turn the legs several times to ensure they are fully coated in the marinade.

Cover the bowl with plastic wrap and let the legs marinate for 20–30 minutes. If you plan to freeze the legs, do so after this step and finish cooking according to the instructions below when needed.

Wrap the bone of each leg in foil to prevent the meat from sliding back, and arrange them loosely in a large baking dish.

Preheat the oven to 190 °C and place the rack in the middle position. Place the dish with the chicken legs in the center of the oven and bake for 20 minutes.

Flip the legs to the other side and continue cooking for another 10 minutes.

Prepare the glaze: in a small bowl, combine honey, mustard, paprika, and soy sauce. Add the remaining olive oil and whisk with a whisk or fork until you achieve a thick, homogeneous mixture.

Remove the dish from the oven and use a pastry brush to coat each chicken leg with the glaze on all sides.

Return the dish to the oven and increase the heat to 210 °C. Continue baking the chicken legs for another 15–20 minutes until they are browned and covered with a crispy crust.
