Ingredients:
3 large plums; ½ cup canola or olive oil; 1 cup full-fat Greek yogurt without additives; 1 cup granulated sugar; 2 large eggs; 1.5 tsp vanilla extract; ½ tsp cardamom; 2 cups flour; 1.5 tsp baking powder; 1 tsp salt.
How to Prepare:
Take a large bowl and whisk the oil with the yogurt, sugar, eggs, and vanilla until smooth and airy. You should get a smooth, fluffy mixture. Add the ground cardamom, flour, baking powder, and a pinch of salt. Gently mix everything with a spatula — it’s okay if there are a few small lumps, just don’t overdo it.
Prepare the baking pan: line it with parchment paper or lightly grease it with oil. Pour the batter into the pan and smooth the surface with a spatula. Now, beautifully arrange the sliced plums in a circle — they will decorate the cake and give it an amazing juicy flavor.
