It seems there is nothing simpler than cracking a couple of eggs into a pan. But the result doesn't always meet expectations: instead of a fluffy mixture, the dish often turns out tough. To make the perfect scrambled eggs, use these tips.
Add a Little Cold Water
A few tablespoons of ice-cold water will give the eggs a velvety texture. During cooking, the water turns into steam, making the mixture fluffier. Some chefs use sparkling water to enhance the effect.
Cook on Low Heat
Even a regular fried egg should be cooked on low heat to prevent the white from losing moisture and remaining tender. For scrambled eggs, stir them for 10–15 minutes, and then immediately transfer to a plate.
Use Dairy Products
Milk, cream, sour cream, mayonnaise, butter, or several types of cheese make the scrambled eggs softer and tastier. They can be added to the egg mixture before frying or after the eggs start to set in the pan.
Add Sauces and Tomatoes
Vegetable sauces or stews complement scrambled eggs perfectly. It’s best to drain excess liquid from the can, and the vegetables can be lightly sautéed. Fresh tomatoes in the summer or sun-dried tomatoes in the winter also work well. White pepper and a little sugar enhance the flavor.
Include Meat or Seafood
For a hearty breakfast, add bacon, ham, boiled chicken breast, smoked fish, or shrimp. Chop the ingredients finely and add them to the eggs when they are almost cooked.
Cornstarch for Texture
Mix a tablespoon of milk with one and a half teaspoons of cornstarch until smooth and combine with the eggs. Pour into the pan and stir once clockwise when it starts to bubble. In a minute, you'll have tender scrambled eggs.
