The pumpkin season has arrived. This unique recipe for preparing pumpkin for the winter will allow you to achieve a bright, juicy, and rich flavor reminiscent of mango. The Secret of "Mango" Pumpkin

This recipe combines the tenderness of pumpkin with the bright tartness of citrus, creating an incredible flavor bouquet. Thanks to lemons and oranges, an ordinary pumpkin preparation turns into a true tropical delicacy that tastes like sunny mango. Moreover, the preparation will not take much time, and the result will exceed all your expectations.

Ingredients (for 2.5 liters of finished product):

Pumpkin - 2 kg Oranges - 2 pcs. Lemon - half Citric acid - 5 g Sugar - 400 g

Preparation

  1. First, the pumpkin needs to be thoroughly peeled and seeded. Then cut it into small cubes. Transfer the chopped pumpkin to a large container where you will mix all the ingredients.

  2. Take the oranges. Peel one orange and cut it into cubes. Cut the second orange into cubes with the peel — this will give the preparation a special aroma and a slight bitterness, which perfectly balances the sweetness. Also, cut half of the lemon into cubes with the peel, remembering to remove the seeds. Add the chopped oranges and lemon to the pumpkin.

  3. To the fruit-pumpkin mixture, add sugar (400 g) and citric acid (5 g). These components will not only provide the necessary sweetness and tartness but also help the juice to be released and act as preservatives.

  4. Thoroughly mix all the ingredients. Leave the mixture for 3 hours so that the pumpkin and citrus release their juice. During this time, stir the mixture 3-4 times to ensure the sugar completely dissolves and the juice is evenly distributed. You will see a lot of aromatic juice appear in the container.

  5. Prepare clean and sterilized glass jars. Distribute the pumpkin-fruit mixture into the jars, filling them to the top. Then pour in the released juice so that the fruits are completely covered. Cover the jars with clean lids (do not screw tightly).

  6. Place the jars in a large pot. First, place cheesecloth or a small towel at the bottom of the pot to prevent the jars from cracking from direct contact with the bottom. Fill the pot with water so that it reaches the jars "to the shoulders."

  7. Bring the water in the pot to a boil, then sterilize the jars for 30 minutes. After sterilization, carefully remove the jars and screw the lids on tightly.
