Why do different colored pastes in a tube not mix?

Because they have high viscosity.

Since 1955, many mixing tubes have been registered, equipped with compartments for various substances and a nozzle for mixing them. However, the process has now been simplified. Three dispensers simultaneously fill the tube with thick pastes of different colors that do not mix, and then they are squeezed onto the toothbrush in approximately equal proportions without the need for additional devices.
