Why does transplanted lupine change its color?

Due to the varying acidity of the soil.

The color of some plants is determined by anthocyanin pigments. In an alkaline environment, anthocyanins are blue, while in an acidic one, they are pink. The acidity of the plant itself depends on the acidity of the soil in which it grows.

Thus, when transplanted to a new location, the flowers can change their shade. However, this does not apply to all plants. Some of them retain their coloration regardless of the type of soil, and for example, in pulmonaria, blue and pink flowers can bloom simultaneously on the same stem. Two lupines growing next to each other may be of different colors if there is a piece of limestone under the roots of one of them.
