Unwritten Rules: How to Properly Care for Cutting Boards

Cutting boards should be cleaned after each use; however, this should not be done the way we usually wash dishes: plastic, wood, and natural stone products require a special approach.

It is important to remember that cutting boards should not be placed in the dishwasher, regardless of their material. A strong stream of hot water can damage them, and aggressive detergents can seep into cuts and scratches, remaining there even after washing. As a result, detergent residues can end up in food, which may lead to stomach upset and other digestive issues.

How to Properly Clean Glass and Natural Stone Cutting Boards

Products made from these materials are the easiest to wash: since deep scratches do not form on them, it is sufficient to rinse them with warm soapy water and wipe them dry. This should be done every time after use.

However, glass and natural stone cutting boards have one significant drawback: they quickly dull even the sharpest knives.

How to Wash Plastic Cutting Boards

Plastic cutting boards are considered the most durable among all options, but this only applies to new products. Knives leave scratches on plastic, where small food particles can get trapped and bacteria can multiply. It is nearly impossible to wash them out, so it is best to replace such a board.

As long as there are no visible damages, thoroughly rinse the board with hot soapy water and dry it with a kitchen towel after each use. If you have cut meat or fish on it, be sure to disinfect it with a solution of vinegar and baking soda or citric acid.

How to Clean Wooden Cutting Boards

Wood is the most demanding material. It cannot withstand prolonged contact with moisture, so wooden boards should not be washed in the dishwasher.

The proper cleaning process is as follows:

Remove food residues with a brush or metal mesh.

Rinse the wooden board with soapy water.

Thoroughly rinse the product under running water to remove detergent and clean deep cuts.

Once a week or after handling meat or fish, disinfect the surface of the board with a spray of white vinegar.

Pat the board dry with paper towels, then leave it to air dry before storing it or using it again. Moisture can cause the wood to crack.
