The main difference between microgreens and traditional vegetables lies in the high concentration of vitamins and other beneficial substances.
At the initial stage of their development, young sprouts contain more valuable nutrients that are formed during the seed maturation process, explained hygienist Natalia GURINOVICH.
Microgreens are young shoots of vegetable or root crops (less often grains). Their height is no more than 5–15 cm, and they have thin stems with cotyledons, and sometimes with the first true leaves. The harvest is collected no later than 12 days after sowing.
Microgreens can be purchased in grocery stores, but they are also easy to grow at home. All that is needed are seeds and a nutrient substrate.
