Panzanella with Bacon and Vegetables

Traditional Italian salad with crispy bacon, fresh vegetables, and croutons

 

Ingredients:

Cherry tomatoes - 400 g
Bacon - 6 slices
Shallot - 1 pc.
Bread - 4 slices
Arugula - 4 cups
Ripe avocado - 2 pcs.
Fresh basil - 1/2 cup
Olive oil
Salt, pepper - to taste
Balsamic vinegar - a few drops

Preparation method:

1. Thoroughly wash the vegetables and herbs. Cut the tomatoes in half, dice the avocado, and finely chop the shallot.

2. In a skillet, fry the bacon until crispy, then place it on a paper towel to remove excess fat.

3. In the same skillet, fry the diced bread and place it on a plate.

4. Add a little olive oil and balsamic vinegar to the skillet, and sauté the tomatoes and shallot until soft.

5. In a bowl, combine the sautéed vegetables, bacon pieces, avocado, and croutons. Add the herbs and gently mix all the ingredients.

6. Dress the salad with olive oil, add a few drops of balsamic vinegar, and season with salt and pepper to taste.
