Dietitian Elena Solomatina recommends using sour fruits or onions for shashlik marinade.

 

Dietitian Elena Solomatina shared recommendations for creating a healthy marinade for shashlik, which should ideally use natural ingredients such as onions, sour fruits, and berries.

According to her, cranberries, lingonberries, or pineapple, which contains bromelain that helps break down meat fibers, are perfect for the marinade. Natural sour tomato sauce and vinegar can also be used.

Solomatina particularly highlighted onion sauce, emphasizing that in the Caucasus there is a tradition of marinating meat in onions, as it brings significant benefits.

Any acid helps improve the functioning of gastric juice, especially when it comes to shashlik made from pork and beef. When preparing shashlik from fish, acid is not required, as the meat itself is softer, she explained.

Additionally, Solomatina added that meat can even be marinated in carbonated water.
