April has arrived – it’s time to prepare trout!

A recipe from Raimonds Zommers – a spring dish that will save your time, effort, and money.

 

Latvian chef and taste representative of Maxima Latvija, Raimonds Zommers, shared a recipe for cooking sea trout with asparagus, which allows you to create two exquisite dishes from one fish.

The culinary expert specifies that in this recipe, you can use fresh fish of various types – salmon, halibut, or trout. The latter is sold at a 43% discount at Maxima Latvija until April 22, priced at €12.99 per kilogram.

- Home-cooked meals are undoubtedly tastier, – emphasizes the chef. – However, in the daily hustle and bustle, many Latvians simply lack the time to prepare interesting dishes. Therefore, it is worth looking for solutions that combine three important aspects: convenience, quality, and savings. At Maxima Latvija, you can often find a variety of fresh fish at special offers, which can be cooked in various ways.

I suggest you try my recipe; I assure you, the process will take no more than 20 minutes. I emphasize: for this dish, or rather two, you can use different types of fish – halibut, trout, or salmon.

Fish broth can be made from parts of the fish such as the head, tail, and fins. From this valuable broth, you can create a great soup as you wish. Healthy fish broth can be frozen and kept in the freezer in case you need a quick meal.

Recipe: lightly marinated trout with asparagus

Ingredients for 1 serving:

150 g trout fillet
50 g POKE sauce
30 g Kalamata olive oil
20 g lemon juice
30 g asparagus
10 g green onion
5 g cilantro
20 g cherry tomatoes Well Done
salt, pepper to taste

Preparation:

1. Cut the trout fillet into small pieces.
2. Prepare the marinade for the fish: in one bowl, mix the Poke sauce, olive oil, lemon juice, and salt.
3. Place the cut pieces of trout in the marinade for 10 minutes.
4. While the fish is marinating, prepare a fresh salad: trim the ends of the asparagus and cut the edible part in half, also cut the fresh onion in half lengthwise, and separate the cilantro leaves from the stems. Place all the ingredients in a bowl.
5. Prepare the salad dressing – it can be made in a separate dish or added directly to the salad! Combine the olive oil and lemon juice, mix thoroughly. Let it sit for 3 minutes.
6. Serve the pieces of fish and salad on a plate, garnished with cherry tomatoes, to create a mood and a special flavor note.
