Gulchehra is a dish of Uzbek cuisine, the base of which is chicken with the addition of sour cream. It also includes onion, garlic, and spicy seasonings that give the dish aroma. The chicken meat becomes tender, and the dish itself is appetizing and not too fatty.
How to Cook Gulchehra?
It is quite simple, and even a novice hostess can handle this task. We offer three cooking options.
First Option
This is the traditional and simplest method.
For cooking you will need:
900-1000 g of chicken;
2 cups of sour cream;
1.5-2 cups of water;
a large onion;
three tablespoons of flour;
½ tablespoon of salt;
three cloves of garlic;
5 tablespoons of vegetable or butter;
spices;
salt.
Preparation:
1. Clean the chicken from the skin and cut it into portion-sized pieces. Peel the onion and slice it into thin half-rings. Mince the garlic using any convenient method.
2. In a heavy-bottomed pot or a duck pan, heat the oil, add the pieces of chicken, and fry until golden brown.
3. Mix the sour cream with water and pour this mixture into the pot with the chicken. Cover with a lid and simmer for thirty minutes. Meanwhile, fry the onion and garlic in a separate pan until cooked.
4. Take some broth from the pot, dissolve the flour and salt in it to avoid lumps. Pour it back into the dish and mix thoroughly.
5. Add spices and the fried onion with garlic, cover the pot with a lid, and turn off the heat after a couple of minutes.

Second Option
This recipe involves using a multicooker.
Prepare the following ingredients:
700-800 g of chicken fillet;
1 onion;
two or three cloves of garlic;
three to four tablespoons of vegetable oil;
1 cup of sour cream;
1.5 cups of water;
a small pinch of nutmeg;
salt;
black ground pepper.
Preparation:
1. Prepare all the ingredients. Cut the chicken fillet into medium-sized pieces. Finely chop the onion and mince the garlic in a press or blender.
2. Pour the oil into the multicooker bowl so that it spreads evenly across the bottom. Select the frying or stewing program. Fry the chicken fillet with the onion until golden.
3. Then add the sour cream and water.
4. Switch the multicooker to the stewing mode, cover with a lid, and set the timer for thirty to forty minutes.
5. Five minutes before the cooking is finished, add salt, garlic, and spices.
Ready!
Third Option
Try making a spicy gulchehra with the addition of adjika. This will give the dish an unusual flavor.
List of necessary ingredients:
1 kg of chicken;
a large onion;
1 cup of sour cream;
three to four tablespoons of adjika;
1.5 cups of water;
parsley greens;
1 tablespoon of lemon juice;
3-4 tablespoons of vegetable oil;
a little khmeli-suneli seasoning;
salt.
Preparation:
1. Peel the onion, chop it, and fry it in a deep skillet in oil until transparent and lightly golden. Then transfer it to a bowl, leaving the oil in the skillet.
2. Cut the chicken, but not too small, and fry it in the same oil where the onion was cooked.
3. Mix the water with the sour cream and pour it into the skillet, cover with a lid, and cook the chicken for about half an hour.
4. Then add the fried onion, adjika, and previously chopped parsley, as well as the lemon juice.
5. Cover the skillet again for five minutes, at the end, salt the gulchehra and add spices.
Some tips:
* You can use almost any parts of the chicken for cooking gulchehra, such as thighs or drumsticks. The breast will also work, and during the stewing in sour cream, it will become more tender.
* It is not necessary to remove the skin, but if you want the dish to be lighter, it is better to do so.
* You can experiment with various spices, such as cumin or khmeli-suneli. If the chicken is tough, stew it longer to make it softer. Try mixing chicken meat with turkey or pork, but chicken should prevail to maintain the characteristic flavor.
* For a lighter option, use low-fat sour cream (10-15%). For a hearty dish, choose a fattier product.
* Part of the water can be replaced with milk or cream, which will make the chicken meat even more tender, although the specific smell may not be to everyone's liking.
