Delicious Pork Shashlik
Ingredients:
pork — 1 kg;
onion — 300 g;
kefir — 400 ml;
sparkling water — 100 ml;
salt, pepper, spices — to taste.
Preparation:
1. The first secret that determines the success of your shashlik is the choice of meat. The neck is the optimal option: it is sufficiently fatty and tender.
2. Rinse the meat and cut it into pieces. The ideal size is one that fits in your fist. Smaller pieces will burn quickly, while larger ones may not cook through in the middle.
3. The second secret is to not skimp on the onion. Peel it and chop it finely. You can use a blender to make onion puree. It is important that the marinade contains onion juice, not onion rings.
4. Mix the meat with the onion puree. Add salt and pepper, and other spices if desired.
5. The third secret is kefir and sparkling water. Pour kefir and mineral water over the meat. Place it in a container with a lid or cover it with plastic wrap.
6. Let the meat marinate for a while — from an hour and more. During this time, light the fire on the grill.
7. Skewer the pieces of meat and grill over high heat until the first crust forms. Rotate the skewers often to ensure the meat cooks evenly.
