How to Properly Cook Squid to Keep the Meat Tender?

The less squid are subjected to heat treatment, the better their taste.

 

Among seafood, squid is perhaps one of the most popular products. They have a unique taste, an unmatched aroma, and numerous cooking methods. Even a novice cook can create more than ten dishes using squid meat. However, many housewives rarely turn to this product, considering it not tasty enough and complicated to prepare.

- In fact, squid meat is one of the most tender and healthy. Its toughness arises from excessive boiling time or pouring boiling water to remove the outer skin layer, - explains chef Andrey Romanenko.

According to him, the less boiling water used in the cooking process, the tastier and more tender the final result will be.

How to Remove the Skin Without Boiling?

Rinse the squid body under cold running water. Remove all the insides. Then, gently lift the edge of the skin with a knife and pull it upwards: it will easily separate from the white meat.

After that, cook the squid according to your chosen recipe - boil, bake, or marinate!

Squid in Tomato Sauce

One of the popular recipes of Mediterranean cuisine suggests stewing squid in tomato sauce. Try it, and you won't regret it.

Ingredients:

Squid – 700-800 g;

Canned tomatoes in their own juice – 300 g;

Medium-sized onion – 1-2 pcs.;

Garlic – 2-4 cloves;

Vegetable oil – 3 tbsp.

Salt and black pepper – to taste.

Cooking Method:

Rinse the squid in water, remove the insides, and take off the film.

Cut the meat into rings or cubes - whichever you prefer.

Prepare finely chopped tomatoes, onion, and garlic.

Sauté the squid for 3-5 minutes in a pan with vegetable oil. Then place them on a plate.

Heat the remaining oil over medium heat, sauté the onion and garlic. Add the tomato juice or tomatoes, simmer everything for 5 minutes, after which return the squid to the pan and sprinkle the dish with fresh dill.

Wait for the sauce to boil again, and then turn it off. The dish is ready.
