According to dietitian Angelica Duval, aspic is contraindicated for people with gout, pancreatitis, and kidney stones.
The specialist explained the risks that may arise from consuming aspic. Angelica Duval noted that this dish is a rich source of purines – organic compounds that, when entering the body, contribute to the crystallization of uric acid salts and the formation of stones. Considering this feature, aspic is not recommended for certain diseases.
“Due to the high purine content in dishes such as aspic, jelly, and meat in aspic, their consumption is prohibited in cases of gout,” emphasized the doctor.
Moreover, aspic should not be included in the diet of people with pancreatitis (a disease of the pancreas). Duval warned that its consumption in this case may trigger a flare-up.
Another condition for which one should refrain from aspic is the presence of stones in the kidneys and bladder. Urolithiasis can also worsen under the influence of a large amount of purines.
The medic added that even in the absence of the mentioned diseases, consuming aspic can negatively affect well-being, as this dish is hard to digest. Various seasonings can help cope with its assimilation.
“It is no coincidence that aspic is served with spicy additions such as horseradish or mustard. These spices promote the secretion of gastric juices and make the digestion process faster and more efficient,” reported the dietitian.
