With the advent of immersion blenders, making mayonnaise at home has become accessible for every housewife. We offer you four recipes for appetizing sauces based on basic homemade mayonnaise. Try them, and we assure you, these sauces will become your favorite condiments for any dishes!
1. Simple and Quick Mayonnaise from a Whole Egg
I won’t suggest a complicated recipe where the oil is added in a thin stream. My basic version is very simple: it is made with an immersion blender using a whole egg, and the temperature of the ingredients does not matter here.
Ingredients:
1 egg
200 g vegetable oil
2-3 tsp lemon juice or vinegar
1-1.5 tsp mustard
salt,
pepper
Break the egg into a blender cup or a half-liter jar so that the yolk remains whole. Then pour all the oil on top.
Using the blender, “press” on the yolk and start whipping the mixture without moving the blender. When you notice that the mixture is successfully emulsifying and becoming thick, start moving the blender up and down to achieve a homogeneous sauce. Keep in mind that the less oil you use, the less thick the mayonnaise will be.
When the emulsion is ready, add the mustard, lemon juice, and spices to taste, then mix until smooth or blend again.
2. Milk Mayonnaise
This mayonnaise is made without eggs and tastes similar to the one that used to be sold in small 250 ml jars known as “mayonnaise jars.” Its texture is thicker and denser than the first version.
Ingredients:
70 ml milk
140 ml vegetable oil
1 tbsp lemon juice or vinegar
1 tsp mustard
salt,
pepper
In this case, it is better to use milk and oil at approximately the same temperature. The preparation process is similar to the previous one: mix the milk and oil, whip with an immersion blender until emulsified, season with salt and pepper, add acid and mustard.
3. Aioli Sauce
Aioli is a famous and popular sauce. I especially like its taste with young garlic — it goes great with fried shrimp!
Ingredients:
160 ml vegetable oil
1 egg
2-3 garlic cloves
1-1.5 tbsp lemon juice or vinegar
1 tsp mustard
salt,
pepper
Prepare simple mayonnaise, then add crushed or pressed garlic to it. It’s better to let the sauce sit for a couple of hours.
4. Wasabi Mayonnaise
This sauce has an interesting and spicy flavor. It goes well with both fish and meat. I used it for a snack cake made of zucchini pancakes — it turned out very tasty. Be sure to try it!
Ingredients:
200 ml vegetable oil
1 egg
1-2 tbsp wasabi powder
1-2 tbsp room temperature boiled water
1.5 tbsp lemon juice or vinegar
salt,
pepper
Dissolve the wasabi in water until you get a homogeneous paste-like consistency.
Prepare simple mayonnaise by adding the wasabi paste to the egg with oil before emulsifying. Then season the mayonnaise with acid, salt, and pepper to taste.
The amount of wasabi can be adjusted according to your preference for spiciness.
