Recipe for Pork Braised in Milk

Pork cooked in milk has a rich aroma and incredible tenderness.

 

Pork braised in milk is a very tender and aromatic dish. The meat prepared in this way becomes soft and literally melts in your mouth. Pork Braised in Milk

Ingredients:

pork loin – 1.5 kg;
butter – 1 tbsp;
garlic – 5-7 cloves;
milk – 4 cups;
carrot – 1 pc;
onion – 1 pc;
salt – to taste;
black ground pepper – to taste;
bay leaf – 2 pcs;
rosemary – 2 sprigs.

Preparation method:

Thoroughly rinse the pork and tie it with kitchen twine so that the meat retains its shape during braising.

Peel the garlic and cut it into small pieces. Make small incisions in different parts of the meat with a sharp knife and stuff it with garlic. It is best to do this 2-3 hours before baking or leave it overnight so that the meat absorbs the garlic aroma well.

Rub the loin with salt and pepper to taste.

Preheat the oven to 160-180 degrees.

In a deep pot, melt the butter, add sunflower oil, and fry the pork on all sides until golden brown.

Peel, rinse, and cut the onion and carrot in half, then add them to the pot with the meat along with the bay leaves and rosemary sprigs. The herbs will give the dish a rich spicy aroma.

Pour four cups of milk over the pork and vegetables and bring to a boil on the stove. During cooking, the milk may resemble buttermilk, but this is normal.

Cover the pot with a lid and place it in the oven for two hours. During cooking, the meat should be turned at least once to ensure even braising.

Remove the finished pork from the pot and wrap it in foil to retain heat and juiciness.

Remove the herbs, carrot, and onion from the broth. Reduce the remaining broth on the stove until its volume decreases to 300 ml. After that, blend the broth using a blender.

If the sauce is too thin, you can add fried flour, a thickener, or cornstarch. To do this, dissolve one of the ingredients in water and, stirring, pour it into the boiling sauce. Add spices to taste.

Remove the twine from the cooked meat, slice the pork into thin pieces. Arrange on a warm plate, drizzle with the spicy-milky sauce, and sprinkle with chopped herbs.
