Cottage Cheese Casserole with Oatmeal and Cinnamon without Flour and Sugar

This recipe for a sweet low-carb cottage cheese casserole contains no flour or sugar. It is healthy yet very tasty and tender. It can be served hot or cold, complemented with homemade berry sauce or natural syrup.

Ingredients:

Cottage cheese 5% — 360 g.
Chicken eggs — 2 pcs.
Oatmeal — 30 g.
Baking powder — ½ tsp.
Cinnamon — ⅓ tsp.
Salt — a pinch.
Sweetener — 5-6 drops of stevia.

Preparation:

1. In a deep bowl, combine soft cottage cheese, eggs, and salt. As a sweetener, add five to six drops of liquid vanilla stevia. Using an immersion blender, whip the mixture until a homogeneous paste-like consistency is achieved.

2. Now let's deal with the dry ingredients. Mix the oatmeal with the baking powder and cinnamon. Grind the oatmeal into fine crumbs to make the casserole softer and more tender.

3. Add the dry ingredients to the cottage cheese mixture and mix thoroughly. The cottage cheese batter is ready.

4. Line the bottom of a springform pan with parchment paper. Grease the paper and the sides of the pan with a drop of vegetable oil.

Cottage Cheese Casserole with Banana and Berries (Sugar-Free)

 -

A healthy cottage cheese casserole without sugar, but with the addition of banana and berries. In this recipe, I use blackberries, but you can choose strawberries, black currants, raspberries, as well as fruit puree from plums, apples, apricots, or peaches. Frozen berries are also suitable, but they should be thawed beforehand.

Ingredients:

Ripe banana — 1 pc.
Cottage cheese — 400 g.
Berries (blackberries) — 400 g.
Eggs — 2 pcs.
Corn starch — 30 g.

Preparation:

1. Peel the banana and place it in a blender bowl. Rinse and sort the blackberries thoroughly, then add them to the bowl with the banana.

2. Blend everything together. Pass the resulting puree through a sieve to remove the seeds from the blackberries.

3. Add eggs and starch to the thick cottage cheese. Mash with a fork until a homogeneous mass is achieved.

4. Add the prepared fruit puree to the cottage cheese. Mix the mixture well with a fork or spoon. If you want a smoother texture, you can blend it further with a blender.

5. We will prepare the casserole in a water bath. For this, place a water-tight dish in a deep frying pan or saucepan. Pour the casserole mixture into the dish and add boiling water to the frying pan.

6. Cook at 175 degrees for 35–40 minutes.

Cottage Cheese Casserole “Zebra” with Cocoa in the Oven

An appetizing casserole with a pleasant cottage cheese-chocolate flavor. It is not too sweet and contains few calories, so it can be consumed even by those who are watching their weight. If you prefer a pronounced sweetness, I recommend doubling the amount of sweetener.

Chicken eggs — 2 pcs.
Milk 2.5% — 70 + 10 ml.
Cocoa powder — 10 g.

3. Gradually fold the whipped egg whites into the cottage cheese mixture, gently mixing with a silicone spatula.

4. Transfer half of the cottage cheese batter to a separate container. Add a little milk and cocoa. Mix the cocoa in at medium speed with the mixer.

5. Place the cottage cheese batter in the bottom of a round silicone mold, alternating between white and brown.

6. Place the filled mold in a preheated oven at 180 degrees for 35 minutes. After that, turn off the oven, but do not remove the casserole; leave it there for another hour to an hour and a half.
