Mistakes When Making Olivier Salad
Excessive Amount of Mayonnaise. Often, too much sauce is used for dressing. Keep in mind that it contains over 600 kcal per 100 grams, which significantly increases the calorie content of the salad.
Dressing in Advance. A dressed salad can be stored in the refrigerator for no more than 12 hours, as it spoils quickly. It is best to dress a small amount just before guests arrive; if it runs out, you can always add more.
Slicing Hot Vegetables. They will fall apart and not retain the shape of cubes. The same applies to hot chicken if you are using it. As a result, the salad may resemble puree, which not everyone likes.
Insufficient Amount of Eggs. It is the eggs that bind all the ingredients together, giving the salad tenderness and uniformity. There is a temptation to add more cheap potatoes, but this will not improve the taste of the dish.
Salt at the Beginning of Preparation. Under the influence of salt, the ingredients lose moisture. Therefore, it is best to salt the salad just before serving.
