Can you eat chocolate that has developed a white coating?

Pale spots on chocolate are not harmful to health. This phenomenon is called 'chocolate bloom' and occurs due to the movement of molecules within its substance.

Chocolate is made from the beans of the cocoa plant, which, after fermentation and roasting, are transformed into cocoa mass and cocoa butter. The former is responsible for the flavor and color characteristics of chocolate, while the latter contributes to its texture.

The whitening can be either fat bloom or sugar bloom. Fat bloom occurs when cocoa butter rises to the surface of the product, creating a whitish coating. Sugar bloom occurs in high humidity, leaving a rough surface. The tempering process used in chocolate production helps maintain its structure and shine. However, with improper storage or exposure to heat, chocolate can lose its crystalline structure.

Despite changes in appearance, chocolate remains safe to consume.
