That is, you will need to make mashed potatoes and color it with chopped herbs.
By the way, there is no milk in the dish, so it can be safely consumed by vegetarians, vegans, and those observing fasting. At the same time, the taste of the mash is very rich, thanks to cilantro and ground turmeric.
If you want to make it creamier without violating vegetarian principles, dilute the mashed potatoes with warmed coconut milk. The sweetish hint of coconut can be balanced with a little more salt. It will be delicious!
INGREDIENTS FOR 4 SERVINGS
Potatoes 1 kg Garlic 2 clove(s) Cilantro 8 sprig(s) Olive oil 4 tbsp. Turmeric 0.5 tsp. Salt to taste Black pepper, ground to taste
RECIPE PREPARATION
Step 1
For the mash, choose starchy, fluffy potatoes. Peel the tubers, wash them, and boil in salted water until fully cooked (25–30 minutes).
Step 2
While the potatoes are boiling, prepare the dressing. Sort the cilantro. Separate the thin sprigs with leaves from the stems. Set the stems aside for other dishes, as they will not be needed here. Chop the leaves and then mince them. Peel the garlic cloves and also mince them.
Step 3
Transfer the garlic and cilantro to a mortar. Add salt (preferably coarse or sea salt). Grind with a pestle. Pour in 2 tbsp. of olive oil. Mix thoroughly.
Step 4
Drain the water from the potatoes into a clean container. You will need about 1 cup of it. Mash with a potato masher. Add the ground turmeric. Mix well. Add the fragrant cilantro and garlic mixture in oil.
Step 5
Pour in the remaining olive oil. Mix thoroughly. Season with salt and pepper, and dilute with hot potato broth to achieve a medium thickness.

Mashed potatoes with turmeric can be served as a side dish with any roasted meat or poultry. If you want a purely vegetarian option, complement the dish with slices of whole grain bread toasted in a toaster.
NOTE FOR THE HOSTESS
Adjust the thickness of the mashed potatoes with turmeric to taste by adding more or less broth. If you accidentally left too little, simply use hot water or plant-based milk. Of course, the same can be done in the classic version of mashed potatoes with milk and butter.
