A letter with this demand was sent to the Minister of Health of this European country by the Institute for Global Food Security at Queen's University.
The founder of the organization, Professor of Microbiology and Food Safety Chris Elliott, stated that the carcinogenicity of bacon and ham was proven ten years ago, but no significant actions have been taken since then to reduce their consumption. "Every year of delay means more cases of cancer that could have been prevented, more affected families, and a greater burden on the National Health Service," Elliott said.
The professor noted that the greatest harm to health is caused by nitrites, which are used to process meat to achieve a pink hue and maintain its marketable appearance. However, according to him, these substances contribute to the formation of nitrosamines, which are carcinogens. The expert added that as early as 2015, it was proven that every 50 grams of processed meat consumed daily increases the risk of colorectal cancer by 18 percent.
