Tender shrimp, aromatic vegetables, creamy béchamel, and stretchy cheese turn ordinary lasagna into a true gastronomic delight with a light Mediterranean vibe.

Shrimp lasagna is a recipe that turns a home dinner into a gastronomic feast.

There are recipes that create not only a dish but also an atmosphere — with the aroma of warm olive oil and a light feeling of Mediterranean vacations.

Classic meat lasagna has long been a culinary staple. However, modern gastronomic culture is increasingly turning to lighter and fresher flavors. This is why seafood is appearing more frequently in dishes that were previously associated exclusively with meat.

There are recipes that create not only a dish but also an atmosphere — with the aroma of warm olive oil, baked cheese, and a light feeling of Mediterranean vacations in your kitchen. This is exactly how the shrimp lasagna turned out, from Spanish food blogger Eric Lahuerta.

Recipe

Ingredients

For the lasagna

  • lasagna pasta 12 sheets;

  • cooked shrimp 1 kg;

  • onions 3 pcs;

  • zucchini 1 pc;

  • carrots 2 pcs;

  • mushrooms 6 pcs;

  • crushed tomatoes 400 ml;

  • oregano;

  • olive oil;

  • salt;

  • pepper;

  • parmesan cheese;

  • mozzarella cheese.

For the béchamel sauce

  • butter 60 g;

  • flour 60 g;

  • milk 1 l;

  • salt;

  • pepper.

Preparation

  1. In olive oil, sauté finely chopped onions until soft.

  2. Add carrots, zucchini, and mushrooms, and cook until the vegetables are caramelized and fragrant.

  3. After that, pour in the tomatoes, add oregano, salt, and pepper.

  4. Chop the peeled cooked shrimp and add them to the vegetable mixture at the end of cooking to keep them tender and juicy.

  5. The sauce should reduce slightly and become thicker.

  6. In a saucepan, melt the butter, add the flour, and quickly whisk together.

  7. Gradually pour in the milk, continuing to stir to avoid lumps. The sauce should be velvety and smooth.

  8. Season with salt and pepper.

  9. Spread a little béchamel on the bottom of the dish, then layer with pasta sheets, the shrimp and vegetable filling, and more sauce. Repeat the layers until the ingredients are used up.

  10. The final touch — a generous layer of mozzarella and parmesan on top.

  11. Bake until golden brown.

Shrimp lasagna is a great example of how a familiar dish can sound new. The combination of seafood, vegetables, and creamy sauce makes it hearty, tender, and lighter in taste than the classic meat version.
