Baked fish with vegetables is considered an excellent option for a hearty and healthy lunch or dinner. The right combination of ingredients helps to preserve the juiciness of the fillet and enhance its flavor.
Ingredients:

cod fillet — 300–400 grams;

cherry tomatoes — 150 grams;

bell pepper — half;

capers — one tablespoon;

dill — one bunch;

feta cheese — 50 grams;

salt, pepper, and Provençal herbs — to taste;

vegetable oil for baking.
Preparation:
In the first stage, the chopped pepper and tomatoes are placed in a baking dish, seasoned with spices, mixed with capers, and placed in a preheated oven at 180 degrees for 25 minutes. After the vegetables are browned, the dish should be taken out to add the remaining components.
On top of the vegetable mixture, the fish is placed, sprinkled with dill and spices, lightly drizzled with oil, and topped with cheese. The dish is returned to the oven for another 15–20 minutes. Baking time may increase if large pieces of cod are used.
