Ingredients

For the Sauce

— bacon — 120 g

— onion — 1 large

— champignon mushrooms — 500 g

— red wine — 100 ml

— chicken broth — 400 ml

— tomato paste — 1 tbsp.

— garlic — 2 cloves

— bay leaf — 1 pc.

— black pepper — ¼ tsp.

— flour — 25 g

— butter — 30 g

Preparation

Mix the ground meat with the egg, breadcrumbs, and spices until smooth, then form small meatballs.

In a heated skillet, fry the bacon until crispy and set it aside. In the rendered fat, brown the meatballs on all sides until partially cooked, then also remove them from the skillet.

Chop the onion and sauté it until soft, then add the champignon mushrooms and cook until golden. After that, pour in the red wine and reduce it almost completely, stirring occasionally.

Add the chicken broth, tomato paste, minced garlic, and bay leaf to the skillet. Season the sauce with salt and pepper and mix thoroughly.

Return the meatballs and bacon to the sauce, bring to a gentle simmer, and stew on low heat until cooked through.

Separately, mash the butter with the flour until smooth and gradually incorporate it into the sauce, stirring constantly. This will give the sauce thickness and a velvety texture.

Serve the finished dish hot, garnished with fresh herbs. It pairs well with mashed potatoes, pasta, or fresh bread that perfectly absorbs the rich sauce.
