Cheese pancakes are one of the most popular dishes of home cooking. They are suitable for breakfast and for a cozy family tea party. However, achieving the perfect texture — soft on the inside and golden on the outside — is not always easy. Much of the result depends on the properly chosen cottage cheese and adherence to a few simple cooking rules.
Which cottage cheese is best to choose
The main secret to tasty cheese pancakes is quality cottage cheese. It should be soft and have small curds or an almost homogeneous texture.
Too wet cottage cheese will require adding a lot of flour, which can make the pancakes dense. At the same time, too dry product with large hard grains will also not work — the mixture will not hold its shape well.
It is best to use cottage cheese of medium moisture and not completely fat-free. Such a product allows for a tender and soft texture of the finished dish.
Preparing the cottage cheese mixture
For preparation, you will need:
- 600 g of cottage cheese
- 4 heaping tablespoons of sugar
- 1 teaspoon of vanilla sugar
- a pinch of salt
- 1 large egg
All ingredients are thoroughly mixed. It is advisable to mash the cottage cheese with a fork or lightly blend it with a blender to make the mixture creamier. However, it is not necessary to completely eliminate the curds — they give the pancakes their characteristic texture.
How much flour to add
The amount of flour depends on the moisture of the cottage cheese. Usually, you start with three heaping tablespoons of flour.
After mixing, it is important to assess the consistency: the mixture should hold its shape but remain soft and slightly sticky. Too much flour makes the pancakes dense and less tender.
Some flour will also be needed for dusting during shaping. Optionally, you can add raisins or other dried fruits to the dough.
Shaping the pancakes
Lightly dust the working surface with flour. Cheese pancakes can be shaped by hand, but it is more convenient to use an ice cream scoop — this way, the portions are uniform.
Portions of the cottage cheese mixture are rolled in flour and shaped into neat round patties. If necessary, the shape can be adjusted with a knife or a glass.
Frying
Pour a little vegetable oil into the frying pan and add a small piece of butter. This combination gives the pancakes a pleasant aroma and a golden crust.
Fry them over medium heat for a few minutes on each side. Too high heat can lead to burning.
If the pancakes spread too much during frying, it may indicate that the cottage cheese is too wet or fatty.
Completing the cooking
After frying, the pancakes can be transferred to a baking sheet and sent to the oven preheated to 180 °C for about 5 minutes. This is enough for them to heat well inside.
It is not recommended to keep them in the oven longer — the pancakes may rise significantly and then fall.
To remove excess oil, the finished products can be placed on a paper towel.

Traditionally, cheese pancakes are served with sour cream, honey, or jam. This simple dish becomes especially cozy and homely, and the combination of tender cottage cheese texture and golden crust makes it a favorite breakfast in many families.
