A morning breakfast can be not only tasty but also healthy. One option is to make pancakes without sugar and wheat flour. This recipe is suitable for those who try to adhere to the principles of proper nutrition and want to diversify their morning menu.
Instead of regular flour, this recipe uses oatmeal. It has a lower glycemic index and contains a large amount of fiber. As a result, dishes made with oatmeal are digested more slowly and help maintain a feeling of fullness for a longer time.
Ripe bananas serve as the sweetener. Despite their natural sweetness, bananas contain fiber, which helps prevent sharp spikes in blood sugar levels.
Ingredients
- 2 ripe bananas
- 1 egg
- oatmeal flour
- a pinch of baking soda
- oil for frying (optional)
How to Prepare
The bananas should be thoroughly mashed with a fork until they reach a puree consistency. Then add the egg, a little baking soda, and oatmeal flour.
If possible, you can make oatmeal flour yourself by grinding oatmeal flakes in a coffee grinder or blender. Store-bought flour will also work.
After mixing the ingredients, it is advisable to let the batter sit for about 5 minutes to allow the oatmeal flour to swell a bit. The consistency should be soft and slightly runny.
Heat a frying pan. If desired, you can use a little oil or cook on a non-stick surface without it. Spoon small portions of the batter onto the pan and fry the pancakes over medium heat on both sides until golden brown.
Serve the pancakes hot. You can use sour cream, yogurt, berries, or honey as a topping.
