Traditional oatmeal can be boring — unless you know the secret to turning it into a true culinary delight. Add a poached egg with a runny center, aromatic tomatoes, and Mediterranean herbs, and an ordinary breakfast transforms into a creamy, appetizing dish that looks like it’s from a café and takes just minutes to prepare.
Ingredients
- Oat flakes — 1 cup
- Water — 2 cups
- Onion — 0.5 pcs.
- Chopped tomatoes — 4 tbsp.
- Chicken eggs — 2 pcs.
- Butter — 10 g
- Hard cheese — 20 g
- Vegetable oil — 10 ml
- 5% vinegar — 2 tbsp.
- Herb mix (thyme, oregano, basil) — 2 g
- Dried garlic — 1 g
- Salt — 3 g
- Ground black pepper — 1 g
Preparation
Preparing the Oat Base
- Finely chop the onion and sauté it in a pot with vegetable oil until translucent (3 minutes).
- Add the chopped tomatoes, dried garlic, herb mix, salt, and pepper. Simmer for a couple of minutes to release the aromas.
- Stir in the oat flakes, pour in boiling water, and cook on low heat for about 10 minutes until the liquid evaporates.
Preparing the Poached Egg
- Pour water into a pot, add vinegar, and create a whirlpool with a spoon.
- Gently pour the egg into the center of the whirlpool.
- Cook for 2–3 minutes until the white is set and the yolk remains runny.
- Remove the egg onto a napkin or briefly dip it in cold water.
Serving
- Stir the butter into the cooked oatmeal.
- Place the porridge on a plate using a cooking ring for a nice shape.
- Carefully place the poached egg on top, sprinkle with grated hard cheese, and garnish with orange slices.
