- Meat — 700 g
- Onion — 1 pc
- Water — 700 ml
- Vegetable oil — 4 tbsp
- Butter — 30 g
- Wheat flour — 1.5 tbsp
- Tomato paste — 1 tbsp
- Sugar — 0.3 tsp
- Salt — 1 tsp
- Ground black pepper — to taste
- Bay leaf — 2 pcs
- Black peppercorns — 5 pcs

Cut the meat into small cubes. Peel and finely chop the onion. Heat the vegetable oil in a frying pan and fry the meat over high heat until lightly browned and all moisture has evaporated.

Transfer the meat to a heavy-bottomed pot. In the same frying pan, sauté the onion until golden, add sugar for caramelization, and after a minute, combine with the meat. Pour in water so that it completely covers the ingredients, bring to a boil, reduce the heat, and simmer covered for 40–50 minutes.

Pour some broth into a separate container. In a clean frying pan, melt the butter with the vegetable oil, add the flour, and stir until it takes on a light nutty color. Gradually pour in the broth, stirring until lumps disappear, and transfer the mixture to the pot.

Add the tomato paste, salt, pepper, bay leaf, and black peppercorns. Stir and leave on low heat for another 20 minutes until fully cooked.
