Garlic Soup “Česnečka”: A Warming Winter Dish from the Czech Republic

Hot garlic soup “Česnečka” is a hallmark of Czech cuisine that helps cope with cold winter days and recover after festive feasts. The aroma of garlic combined with sautéed potatoes in lard, caraway, and marjoram creates a rich flavor and a cozy home atmosphere. Ingredients:

  • Potatoes — 4–5 pcs.
  • Garlic — 28 cloves
  • Onion — 2 pcs.
  • Broth (meat or vegetable) — 2 l
  • Lard or butter — 40 g
  • Ground caraway — 1 tsp.
  • Dried marjoram — 1 tsp.
  • Bread for croutons — 3 slices
  • Salt, pepper, dried herbs — to taste

Preparation:

  1. Cut the potatoes into cubes and boil in the boiling broth for 7 minutes.
  2. In a pan, toast the bread until it becomes crispy croutons. In another pan, sauté the finely chopped onion in lard or butter until soft.
  3. Remove the potatoes with a slotted spoon and add them to the onion, sautéing together for about 5 minutes until lightly golden.
  4. Add 25 cloves of garlic, sliced thinly, to the boiling broth. Combine the sautéed potatoes with the onion and garlic broth, and cook until the potatoes are completely soft.
  5. At the end, add crushed marjoram, caraway, salt, and pepper. Grate the remaining 2–3 cloves of garlic directly into the soup for a more intense aroma.
  6. Serve hot, garnished with croutons and fresh herbs.
