Easy and Healthy: How to Make Vegetable Lasagna Without Meat

Lasagna is traditionally associated with meat fillings and rich sauces; however, this Italian dish has a no less delicious and much lighter alternative — the vegetable version. It is suitable for those who are fasting, reducing calorie intake, or simply want to diversify their menu with healthy dishes.

Vegetable lasagna turns out juicy, aromatic, and in many ways resembles delicate vegetable caviar in its composition. At the same time, it is quite simple to prepare and does not require rare ingredients.

Ingredients

You will need:

  • 1 zucchini
  • 2–3 eggplants
  • 2–3 tomatoes
  • 1–2 carrots
  • 2–3 bell peppers
  • 0.5 cup of milk
  • 200 g of hard cheese
  • 1 tablespoon of butter
  • 1 tablespoon of flour
  • 1 tablespoon of vegetable oil
  • 15 sheets of lasagna
  • salt, pepper, and spices — to taste

How to Make Vegetable Lasagna

Cut all the vegetables into medium-sized cubes and sauté them in a pan for about 10 minutes, adding salt, pepper, and your favorite spices. To make the flavor more delicate and rich, you can add 2–3 tablespoons of cream during the process.

Grease a baking dish with oil. Lay down a layer of lasagna sheets, then spread some of the vegetable filling on top. Continue alternating layers until the ingredients run out. Finish the dish with 2–3 sheets of lasagna and sprinkle with grated cheese.

Sauce for Juiciness

For additional tenderness, prepare a simple sauce. Melt the butter, add the flour, and while constantly stirring, gradually pour in the milk. Bring the sauce to a boil and cook until it reaches the consistency of thick sour cream. This mixture can be used to coat the lasagna sheets before adding the vegetables.

Baking

Bake the lasagna at 180 °C for about 50–60 minutes. If you are using pre-cooked sheets, the cooking time will be reduced to 30–40 minutes. The finished dish should hold its shape well and have an appetizing golden crust.

Vegetable lasagna is perfect for both a casual dinner and a festive table — it is hearty, healthy, and even appeals to those who usually choose meat dishes.
