Juicy chicken fillet with a golden crust gains a special flavor thanks to the tender cheese filling hidden inside each piece. Simple to prepare yet impressive, this dish will be a highlight of any table.
Ingredients
- Chicken fillet — 3 pcs
- Eggs — 3 pcs (1 white for filling, 2 yolks for serving)
- Brynza cheese — 75 g
- Hard cheese — 50 g for filling + 30–50 g for topping
- Parsley — 1 small bunch
- Salt, black pepper — to taste
- Spices — optional (paprika, Provence herbs, dried garlic)
- Garlic — 1 clove (optional)
- Oil for frying — 1–2 tbsp.

Preparing the fillet
Rinse the chicken breast, pat dry, and make a longitudinal cut along the center of each fillet, forming a "pocket" for the filling. Temporarily place a strip of foil inside to maintain shape. Rub the meat with salt, pepper, and spices, adding minced garlic if using.

Frying
Heat a skillet with oil over medium heat and fry the fillets for 1 minute on each side until a light golden crust forms. Transfer the meat to a baking dish.

Preparing the filling
Finely chop the brynza cheese, hard cheese, and parsley. Whisk the white of one egg and combine it with the cheese mixture until smooth. Carefully fill the pockets with the filling, gently pressing the edges to keep the mixture inside.

Baking and serving
Preheat the oven to 200 °C and bake the fillets for 10 minutes until the meat is tender and the filling is slightly set. Remove the dish, sprinkle with grated hard cheese, make a small indentation in the center of each fillet, and carefully place the yolk. Return to the oven for 5 minutes to slightly thicken the yolk while keeping it soft.
Serve hot, garnished with fresh herbs. Side dishes can include vegetables, salad, or potatoes.
