The main idea of the dish is to combine different types of food on one plate, making it beautiful, healthy, and filling, often vegetarian or vegan, with grains, legumes, vegetables, greens, seeds, and sauces.

Ingredients (for 2 servings)

We take:

  • 100 g quinoa (or rice/bulgur)
  • 100 g chickpeas (cooked or canned)
  • 1 carrot
  • 1/2 red bell pepper
  • 50 g red cabbage
  • 50 g spinach or young greens
  • 1 avocado
  • 1 tbsp sesame seeds
  • 2–3 tbsp olive oil
  • Juice of half a lemon
  • Salt, pepper, paprika — to taste
  • Sauce (optional): tahini, yogurt, soy sauce)

How to Prepare

  1. Rinse quinoa, cover with water, and cook until done (about 12–15 minutes). Drain excess water.
  2. In a small pot or skillet, lightly heat chickpeas, add salt, and optionally a pinch of paprika.
  3. Cut carrot into thin strips, bell pepper into slices, and shred cabbage.
  4. Cut the avocado, remove the pit, and slice it.
  5. Layer the ingredients in a bowl or arrange them by sections: first the grains, then chickpeas, carrot, pepper, cabbage, spinach, and avocado.
  6. Drizzle with olive oil, lemon juice, and add sesame seeds. Optionally, add sauce.
  7. Gently mix or leave it beautifully arranged for serving.

Tip: The Buddha bowl can be changed every time — add seasonal vegetables, legumes, greens, or nuts to create new flavor and color combinations.
